Gluten Free Chewy Coconut Oat Cookie Recipe
These chewy gluten free coconut oat cookies are a wonderful, light treat that will satisfy your sweet tooth. The wholesome ingredients give each cookie an irresistible hint of caramel.

All Purpose Baking Mix

Sweetened Shredded Coconut

cup
Packed Brown Sugar

cup
Granulated Sugar

Honey

cup
Butter or Butter Substitute (room temperature)

Large Egg (room temperature)
½
tsp
Vanilla
⅓
cup
Montana Gluten Free Oatmeal
½
tsp
Baking Powder

tsp
Hot Water
¼
cup
Slivered Almonds (Optional)
Directions
Preheat oven to 350F degrees.
Line baking sheet with parchment paper.
In a medium sized bowl, combine All Purpose Baking Mix and baking powder.
Beat together butter, brown sugar, white sugar, honey, vanilla, water and egg until it becomes a smooth consistency.
Add the flour into the butter mixture. Stir well.
Add in hot water and coconut.
Place the cookie dough onto baking sheet in tablespoon sized scoops. Recipe should make 20-22 cookies.
Add slivered almonds to the tops of your cookies. (Optional)
Bake for 8-10 minutes until edges have started to brown.
Place cookies on wire cooling rack, and let cool for 7-10 minutes.
