1 ½cupsMontana Gluten Free All Purpose Baking Mix or Waffle Pancake Mix
4cupsMontana Gluten Free Raw Oatmeal
1cupshortening or lard
1cupraw sugar
1cupbrown sugar
2eggs
1tspvanilla extract
1tspalmond extract
1tspbaking powder
½tspsalt
1cupraisins (may substitute craisins)
½cupchopped nuts (optional)
Directions
Directions:
Preheat oven to 350° F.
Cream shortening with sugars, add eggs and extracts. Beat 1 minute.
Add All Purpose Baking Mix, baking powder and salt - mix well.
Stir in oatmeal and raisins (and nuts if used).
Spoon onto greased cookie sheet. Shape with wet spatula if necessary.
Cook for 15-20 minutes or until golden brown.
Let cool (slightly) then take off warm pan with metal spatula and place on a cooling rack.
