Gluten free apple flax breakfast muffins made with Montana Gluten Free All Purpose Baking Mix

 ¾ cup Packed brown sugar
 1 ½ tsp Baking powder
  cup Vegetable oil
 2 Large eggs
  cup Milk or milk alternative
 1 tsp Vanilla extract
 1 ½ tbsp Apple cider vinegar
 2 cups Large diced apple
 ¼ cup Flax seed

Preheat the oven to 375F. Line muffin pan with paper liners, or generously grease muffin tin with oil.

In a large bowl, mix together the All-Purpose Baking Mix, brown sugar, and baking powder.

In a small bowl whisk together the oil, milk, eggs, apple cider vinegar and vanilla.

Combine the liquid ingredients and dry ingredients together, folding gently. Fold in apple, flax, and oat.

Scoop the batter into muffin cups. Bake for 20 minutes, or until golden brown. The recipe makes 1 dozen muffins.
